Aam Panna Recipe

  • Raw mangoes – Min. 2-3 Required
  • Jaggery or sugar – approximately 1/2 to 3/4 cup, taste-based adjustment is permitted
  • Cumin powder – roasted 1 tsp
  • Black Salt – 1/2 tsp, adjust based on personal preference
  • Normal Salt – 1/4 tsp
  • Add Mint Leaves If You Like (optional though gives refreshing cooling)
  • Cubed Ice – as needed
  • Water – between 2.5-3 cups which is set aside for blending and further consistency adjustments

Complete Procedure

  • Boiling or Roasting procedure for Mangoes:
  • Boiling Procedure: First of all You have to pressure cook the raw mangoes or boil them in water till soft (2–3 whistles).
  • Roasting also gives a smoky flavor and is done by roasting the mangoes over open flame till charred and soft.
  • Cool & Peel the Skin:
  • Allow to cool, peel and take the pulp from the seed.
  • Blend the Pulp:
  • Place the mango pulp in a blender, add the sugar or jaggery, mint leaves, cumin powder, black salt, salt and a little water.
  • Blend to a smooth puree.
  • Serve:
  • Pour into glasses and add chilled water. Stir gently to mix along with adjusting the consistency of salt and sugar.
